Planning a luncheon for your paving stones patio over the weekend? It doesn't have to be a grand affair. It could be just your small family, a crowd of friends or an extended family day thing. We've come across a delightful treat that is perfect for our vegan and vegetarian stone patio gourmets. All fresh, all veggies and absolutely scrumptious.

This is a great recipe for entertaining mixed crowds or lunch with the girls. The flames of your paver stones grill bring out the robust flavor of the mixed vegetables. Even carnivores can't deny the hardy power-packed flavor of this palate pleaser.
California Grilled Vegetarian Sandwich ala Stone Patio Grill
Serves 4.
Ingredients
1/4 cup regular mayo
3 garlic cloves, finely minced
1 tbs lemon juice concentrate
1/8 cup extra virgin olive oil
1 cup red bell pepper, sliced
1 small zucchini, sliced
1 small red onion, sliced
1 small yellow squash, sliced
2 focaccia bread pieces, split horizontally (4x6)
1/2 cup feta cheese, crumbled
Directions
· In a bowl, mix your mayo, finely minced garlic, and lemon juice concentrate. Set the bowl aside in the refrigerator.
· Step outside and preheat your paver stones grill – set for high heat.
· Using a marinade brush, apply olive oil to each of the vegetable slices (both sides). Brush the grate in the paving stones patio grill with oil as well.
· Line up the peppers and the zucchini slices closest to the center of the grill. Circle them with your onion and squash. Cook on the paver stones grill for approx. 3 minutes, then turn. Cook for another 3 minutes. Remove vegetables from the grill and set them aside.
· Spread a small amount of your mayo mix over the cut sides of your bread, and sprinkle each cut side with the crumbled feta cheese.
· Place the slices on your paver stones grill rack, cheese side to the sky, and replace the paver stone grill cover. Let them cook for another 2-3 minutes so the bread is warmed and the cheese melts slightly.
· Remove the cut slices from the paver stones grill, layer with your grilled vegetables and enjoy.
